]]>The post Three Tips for Making Sourdough From a Starter appeared first on Bob's Hide Out.
]]>A sourdough starter is a living culture of wild yeast and bacteria that leavens the bread. To ensure successful fermentation and a robust rise, it’s essential to maintain a healthy starter. Feed your starter regularly with equal parts flour and water, discarding some of the existing starter before each feeding to keep it active and vibrant. Keep your starter at room temperature for daily use or refrigerate it for less frequent baking.
Sourdough bread requires time and patience to develop its complex flavors and textures. After mixing your dough, allow it to undergo bulk fermentation, where it will ferment and rise slowly over several hours or even overnight. Be patient during this process, as it is crucial for developing the dough’s flavor, structure, and gluten network. Avoid rushing or skipping fermentation steps for the best results.
Achieving a well-developed dough and achieving the desired rise and texture require mastering the technique of handling and shaping sourdough. Practice proper folding and shaping techniques to build strength and structure in the dough, resulting in an airy crumb and a beautifully shaped loaf. Experiment with different shaping methods and scoring patterns to create unique and visually appealing designs on your sourdough loaves.

]]>Chicory has long been used as a coffee substitute, and its rich, creamy, ever so slightly bitter flavor does mimic the taste of coffee well. You can do everything with chicory that you might with coffee, including creating some fabulous iced drinks to see you through the warm summer days.
Many people turn to tea and coffee to give them an energy boost and a sense of refreshment. Mint tea can also deliver this burst of freshness, and it’s better at hydrating you than either tea or coffee so you should feel brighter for longer.
When you need a comforting, warming drink, a turmeric latte is a great option. You can either buy pre-made powders or tea bags to stir into warm milk, or create your own mix with a blend or turmeric, cinnamon, nutmeg and just a little sweetener to round things off.

Mashed potatoes can be transformed into a healthy dish with several food switch-ups. Use Greek yogurt mixed with milk instead of heavy cream, try using less butter, ditch gravy, and consider replacing some of the potatoes with cauliflower.
Making homemade cranberry sauce is the best way to make sure it’s as healthy as possible. If you’re short on time, at least make sure to carefully check the labels when buying canned sauce.
If apple pie happens to be your go-to Thanksgiving dessert, make sure you’re using fresh apples instead of canned apple pie filling, and avoid topping your pie with whipped cream to cut down on sugar and fat.

Our first stop is Sylva, N.C. the home of Innovation Brewing. Innovation Brewing is situated right on Scott Creek and will be serving finger-licking wood-fired pizzas this summer for the first time since the installation of their outdoor oven. If pizza’s not your favorite beer snack, you can always grab a cheeseburger or some fries from the brewery’s fast food restaurant, called Cosmic Carry Out.
Since you are already there, Mad Batter is worth dropping by. This cool eat-in place is housed in one of Jackson County’s most historic buildings and offers no less than nine different North Carolina brews on tap.
The next stop is Franklin, N.C., home to two major brewers – Andrews Brewing Company and the Hoppy Trout Brewing Company. Since you are on a tour, we recommend trying Andrews’ Lightning Road, a premium American pilsner that is quite light and refreshing in the summer heat. Alternatively, you can chug some Ale of the Dragon, amply produced throughout the summer season by Hoppy Trout Brewing. Despite its scary name, this beer is exceptionally palate-friendly and goes well with almost all sorts of snacks.
Our last stop is Cashiers. Believe it or not, this small town just got its first craft brewery earlier this year, Whiteside Brewing Company, named after a mound of rock jutting out of the flat grassland between Highlands and Cashiers. We recommend their beer 3484 – 4.2% pale blonde ale that is both light and refreshing. It offers some unforgettable hoppy flavor with a sudden crisp finish.

]]>Who doesn’t love starting their day with a nice, freshly brewed cup of coffee? Whether you’re a fan of brewing coffee in a pot or using a Keurig, sometimes it’s nice to treat yourself on a rough morning by opting to buy a coffee beverage from a local coffee shop or chain.
One of the most delicious, and most common coffee chains in the U.S is Dunkin’. Now, they are definitely known for their delicious sweet treats such as donuts, croissants, and other food items.
However, their iced coffee drinks are extremely successful as well. If you ever need the perfect amount of a flavorful caffeine pick me up, here are some little insider tips on what exactly goes into your Dunkin’ iced coffee order.
Now, there are four sizes of iced coffee to order. There is small, medium, large, and extra large. Each size correlates with a number and with an amount of each ingredient that gets added. For example, if you order a small vanilla iced coffee with cream, your coffee order will include the pre-brewed iced coffee, a cup filled with ice, two splashes of cream, and two pumps of vanilla flavoring.
However, if you order a medium, you get 3 splashes of cream and 3 pumps of flavoring. The number of splashes of cream and flavor keeps on increasing by one as you go up in size, and so does sugar.
One important tip to note is that the flavorings, or swirls as they are called, already come very sweet. Therefore, if you don’t want your drink to be overridden with sugar and sweetness, choose to forgo the extra sugar.
Instead of ordering a medium mocha iced coffee with skim milk and sugar, order a medium mocha iced coffee with skim milk. Skip the added sugar and your drink will surely taste plenty sweet with the three syrupy pumps of mocha flavoring that comes with your medium order.
Dunkin donuts iced coffee is an amazing morning or afternoon treat and can be just as enjoyable without the addition of extra sugar.
