Onion rings are the best. It’s as close to a fact as an opinion can be. The only way to make them even better is to sub out the breadcrumbs for some mouthwatering crunchy Nacho Cheese Doritos.
With some sweet Vidalia onions, complementing the salty chips, you got a winning snack that’ll keep people coming back over and over.
These rings are baked, not fried, you don’t need all that oil to enjoy that savory taste.
Total Time: 35 minutes Yield: 4 servings
2 Vidalia onions
¼ cup all-purpose flour
4 cups Doritos crumbs
3 eggs, whisked
1. Preheat oven to 450°F. Grease a baking sheet with cooking spray.
2. Slice onions into 1/2-inch circles and separate into rings, keeping only large, whole rings. You should have about 12 to 14 rings.
3. Dip onion rings one at a time into the eggs, then flour, then eggs again, then chips. Place onion rings on the baking sheet, spritz with cooking spray, and bake for 20 to 25 minutes, or until crisp.
