This Simple Salad Will Get Your Skin Glowing

If you’re seeking healthy, glowing skin, a large part of this will come from your diet and nutrition. Eating a wide range of whole foods and plants is seriously important when it comes to maintaining a clear complexion, and this simple salad will definitely help with delivering many of the essential nutrients your skin needs to look and feel its best.

Ingredients (to serve 2):

  • 1 ripe avocado, stone removed and sliced
  • 1 handful of blueberries
  • 2 handfuls of fresh green leaves, such as spinach, chard or arugula
  • 2 tablespoons of toasted nuts
  • 2 large beef tomatoes, sliced
  • 1 tablespoon of olive oil
  • 1 teaspoon of red wine vinegar
  • 1/2 teaspoon of salt

Instructions:

  1. In a large salad bowl, arrange the sliced tomatoes and sliced avocado.
  2. Whisk the oil, vinegar and salt together to create an emulsion.
  3. Tear the leaves and scatter them over the tomatoes and avocado.
  4. Dress the leaves with the salad dressing.
  5. Sprinkle over the blueberries and nuts, tossing lightly to gently combine the ingredients.
  6. Serve immediately.
