@doctortim.md Dark Chocolate Crunchy Quinoa Bites Ingredients -Quinoa 1 cup -Dark Chocolate Chips 60–70% cacao (for baking, look for lowest added sugar content) ½ Cup -Olive Oil 1 cup (coconut oil is often used in baking but has way more saturated fat) Recipe Pop some quinoa. Place pre-rinsed, dried quinoa in a hot pan (without oil) and shake the pan. Be careful not to burn the quinoa as it “pops” fairly quickly. This process only takes about a minute. Put 1 tsp olive oil in a bowl of dark chocolate and microwave for 30 seconds. Mix it, then place for another about 30 seconds. Careful not to burn. Mix in the quinoa. Take a container and line with parchment paper. Portion out the quinoa mixture into circles. Freeze until desired firmness and enjoy! This is a fairly heavy dessert, so you may only need 1!   • Optional: a sprinkle of flaky sea salt for topping

Place the chocolate in a microwave-safe bowl and heat it in 30-second intervals, stirring between each interval until completely melted. Alternatively, melt the chocolate using a double boiler on the stove, stirring often until smooth. 2. Combine the melted chocolate and puffed quinoa. Stir until the puffed quinoa is evenly coated with chocolate. 3. Line muffin tins with paper liners or lightly grease them with cooking spray to prevent sticking. I used silicone molds and it worked even without greasing it. 4. Spoon the chocolate and puffed quinoa mixture into the prepared muffin tins, distributing it evenly among the cups and pack it down. 5. Place the muffin tins in the refrigerator or freezer to allow the chocolate mixture to cool and set. This will take approximately 15-20 minutes. 6. Once the chocolate mixture has cooled and become crispy, remove the muffin tins from the refrigerator. 7. Serve and enjoy your delicious homemade chocolate and puffed quinoa treats! Instructions:

  1. Line a mini muffin tin with liners or use a silicone mold for easy removal, preparing for about 10 chocolate cups. 
  2. Melt dark chocolate chunks in a double boiler or microwave in 30-second bursts until smooth. 
  3. Mix in your choice of nut or seed butter, then fold in puffed quinoa until well coated. 
  4. Fill the muffin molds to the brim, pressing down slightly to compact. Optionally, sprinkle flaky sea salt for added flavor. 
  5. Freeze for 30 minutes or refrigerate for an hour until set. 
  6. Once firm, remove from molds. Enjoy immediately or store in the refrigerator for two weeks or the freezer for three months.
