Anthony Bourdain has a vision that this specific dish from the Filipino cuisine will become a huge trend in America. He describes the dish as “It’s exactly what you need after a few beers and that’s a perfect food.”
Bourdain explains in an interview with CNN Philippines’ The Source that American palates are beginning to be more and more intrigued by different tastes especially in the Filipino cuisine. “I think sisig is perfectly positioned to win the hearts and minds of the world as a whole. I think that’s the one that’s going to hook ‘em.”
But what is sisig exactly? Well, it is a pork dish made with different parts of pig including the snout, ears and jowl. That may not sound so appetizing but Bourdain really makes it sound irreplaceable. “It’s hot, sizzling, crispy, sticky, delicious bits of pork with many textures.” On top of that, it’s also pretty cheap. He plans on adding this dish to the Bourdain Market which is a street food center in New York that will be opening up in 2019. Until that arrives, over in the West Coast you can try the sisig burrito at one of the Señor Sisig food trucks located in San Francisco!
